Best ever beef chili

I love chili!

Love it in a bowl with all the fixins, or over fritos with melted cheese like nachos. I like it poured over a baked potato or even baked with pasta and cheese, not to mention the stand by hot dog or fries!

This is a fix it and forget it meal. You can have it in the slow cooker in under 30 minutes and forget about it until dinner. Most people have a go to chili recipe, but mine has a few surprise ingredients.

The first is mushrooms, I know it sounds weird but they add to the beefiness flavor of the chili. I like to use lean ground beef and that's not as flavorful as the fattier mixes so the mushrooms really help. If you don't like mushrooms, please give it a go, you wont even know they're there just that the chili is yummy.

The second one is to char and tear up 2 corn tortillas and stir them into the mix. While the chili cooks they just melt into the chili and leave behind a lovely toasty flavor.

Last but not least, at the very end I add a couple of squares of a Lindt dark chocolate chili bar. This tip came a couple years back from a dear friend of mine, thank you Patty I'll never do chili without it!

Best ever beef chili

2 Lbs ground beef

10 brown mushrooms or 1 portabello chopped

1 Red bell pepper chopped

1 white onion chopped

3 Tb olive oil

1 15 oz can EACH pinto beans, red kidney beans and black beans drained

28 oz can fire roasted crushed tomatoes

1 15 oz can red enchilada sauce

2 Tb chili powder

2 tsp cumin

1 tsp corriander

1 Tb dried cilantro

1 tsp smoked paprika

2 corn tortillas (if you have a gas range char them a minute right on the burner if not you can just add them in they will still give great flavor)

2 squares Lindt dark chocolate chili bar

Put the oil in a pan over medium/high heat and add mushrooms, onions and bell pepper with a little salt and pepper and sauté just until they soften a bit, about 5-7 minutes.

Next add the ground beef to the veggies and cook until the beef is cooked through. If you have a lot of fat drain that before continuing.

Add all the spices and cook for another minute.

Put this mixture in the slow cooker and add everything else EXCEPT the chocolate stir and let go on high for 4 hours or low for 6.

Just prior to serving add the chocolate and stir until its melted.

Top with your favorite condiments and enjoy.
