This is a go to!
Forget about getting the family together and heading off to that chain that's known for lettuce wraps..lol Before you could get there these could be ready to eat.
It comes together in no time at all, it's crunchy, a little spicy, a little sweet and super delicious.
You can feel good about serving it to the family as well, it's filled with good for you veggies.
Two of my favorite condiments for this is a spicy vinegar sauce and quick pickled veggies.
An added bonus is it's budget friendly!
Chicken lettuce wraps
Total time 25-30 min
1 head Iceberg lettuce or two Artisan romaine heads (they are smaller than the standard romaine and my new favorite!)
2 Tb olive oil
1 lb ground chicken
3 cloves of garlic minced
1 yellow bell pepper diced small
1 onion diced
1 carrot shredded
1 can water chestnuts drained and diced
3 green onion chopped, both whites and greens
1/2 cup roasted chopped peanuts, or pine nuts
1/2 cup hoisin sauce
3 Tb soy sauce
2 Tb rice wine vinegar
1 Tb srirachi
In a small bowl combine all sauce ingredients and set aside.
In a medium skillet over medium heat add oil and ground chicken and cook until about half way cooked. Add garlic, onion, bell pepper and shredded carrot. Cook until onions are translucent and meat is cooked through. Add sauce mixture, green onion and water chestnuts.
Cook for another 3-5 minutes.
Fill a lettuce leaf with the chicken mixture and top with peanuts.
If you really want to gild the lilly so to speak here are my favorite condiments.
My favorite condiments for wraps
Spicy vinegar sauce
3 Tb fresh lime juice
3 Tb rice wine vinegar
1 1/2 Tb sriracha
1 Tb sugar
2 tsp fresh minced garlic
1 tsp sesame oil
3 Tb chopped cilantro
Combine all ingredients in a jar and shake to combine.
Quick pickled veggies
1 hot house cucumber sliced thin
2 carrots sliced into matchsticks
1/2 red onions sliced thin
1/2 rice wine vinegar
Combine all ingredients in a bowl, mix well and let set for at least 20 minutes
