
The traditional French 75 is Gin, lemon juice, simple syrup and champagne/Sparkling Wine
This version just adds a couple of Earl Grey tea bags to the simple syrup to steep. The
tea gives a lovely background and actually accentuates the citrus.
You can easily adjust how much tea flavor you get by steeping for a longer or shorter time.
I recommend using a middle of the road bubbly anytime your mixing it with other spirits or flavors. I like a dry gin for this cocktail like Citadelle or Bull Dog.

Earl Grey French 75
makes one cocktail
1 1/2 oz Gin
1 oz fresh lemon juice
1 oz earl grey simple syrup
Champagne/Sparkling Wine to top
Lemon twist for garnish
Earl Grey Simple Syrup
1/3 cup sugar
1/3 cup water
2 bags of Earl Grey tea (I use decaf)
To Make simple syrup add water and sugar to a small sauce pot. Turn heat to medium and stir to dissolve sugar. Add in the tea bags and let gently boil for 5 minutes then drop heat to low and let go for another 15 minutes.
Taste as its cooking to find the strength you like.
To make the cocktail, add the gin, lemon juice and simple syrup to a shaker with ice and shake about 12 seconds. Strain into a champagne flute and top with cold sparkling wine Garnish with lemon twist.
This is also lovely in a bucket glass with an ice block, after all its really a Tom Collins with Sparkling Wine instead of soda water!
