This is a dip that's always a hit, even with people that aren't crazy about hummus.
I guess that's really a thing, although I don't know how, I love hummus in all forms!
Leftovers, if you should have any make a great wrap for lunch!
You can use store bought hummus, if you do that I add a good squeeze of lemon and a little olive oil, salt and pepper and give it a good stir before putting in the dish for your base.
The lemon just brightens it up and the oil gives it a richer homemade flavor.

Italian Hummus Dip
3 cups hummus
1 lb ground turkey breast
2 cups spinach
1 heaping Tb minced garlic
1 Tb italian seasoning
5 roma tomatoes diced (no need to seed)
3 Tb olive oil
2 Tb grated parmesan
salt and pepper
additional olive for drizziling
zest of 1/2 a lemon
Pita chips for dipping
Pre heat oven to 400
Mix diced tomatoes with olive oil a bit of salt and pepper and place on a parchment lined baking sheet.
Bake for 20 minutes or until some edges are getting dark and caramelized.
While tomatoes are baking, cook turkey in a non stick skillet over medium heat until almost cooked through.
Add italian seasoning, garlic, spinach and a sprinkle of salt and pepper. Continue cooking until spinach begins to wilt. Take off the heat and let sit until your ready for it, the spinach will continue to wilt from the heat of the turkey.
Once tomatoes and turkey are done, spread hummus on the bottom of a bowl, top with turkey mixture, top turkey with roasted tomatoes and sprinkle with sea salt.
Zest 1/2 a lemon over everything, drizzle with olive oil and add parmesan.
