I love, I mean Love a burger...lol but, my husband and I have been trying to do a meatless meal at least once a week.
This will not disappoint.
The mushrooms added to the lentils give this a "meaty taste"
The mixture is super easy to make, especially if you get the prepared lentils from Trader Joe's.
Look I have no problem taking help on products that don't affect the taste and quality of the end result. These lentils are tasty and I use them a lot for salads and soups as well.
Top these with your favorite toppings and a little of my "secret sauce" and I think you'll enjoy.
makes 8 generous patties
prep and cook time 30 minutes + 20 minutes rest time for mixture (not a must but better if you have the time)
2 cups cooked lentils
1 cup sliced mushrooms
2 small or 1 large carrot sliced and peeled
1/2 of one large onion chopped
3-4 garlic cloves smashed
1/2 cup roasted pistachios
1/2 cup roasted sunflower seeds
1/2 cup quick cooking oats
2 large eggs
1 cup Panko
3 TB tomato paste
3 TB Worcestershire sauce
2 TB Italian seasoning (you could easily change this up by using curry or taco seasoning)
1 tsp sea salt
Place carrot, onion, mushrooms and garlic in a food processor and pulse until finely chopped.
Put mixture in a large mixing bowl.
Put lentils into processor bowl and process until about 1/2 are in a paste and 1/2 are still in whole or pieces. put that in the mixing bowl with the veggie mixture.
Process nuts in the food processor until fairly fine and add to the bowl as well along with the panko, oats and breadcrumbs stir to combine.
In a small bowl whisk the eggs, tomato paste, Worcestershire sauce, seasoning and salt. Pour into veggie mixture and stir to combine.
This is best if you can refrigerate at this point for 20 minutes, if you don't have the time you can cook the patties now, they're just easier to work with and the flavor really develops if it can sit. You can even make it in the morning and just leave it in the fridge until the evening.
Form into 8 Patties and cook in a nonstick skillet over medium heat in a little olive oil until browned on both sides.
Combine all ingredients in a small bowl and whisk.
This is great on any kind of burger or sandwich.
