We are all looking for quick options for some favorites that we may usually get at a restaurant. Here's a quick meal that comes together in under 15 minutes once you slice everything, and bonus points for the fact that kids love this one!
I take a short cut here by using flour tortillas in place of making the asian pancakes to wrap everything in.
I'll be the first to admit I love making things from scratch, but reality is that some nights you just need to get a good meal on the table!
Right about now, I'm open to shortcuts!
In our house this is usually served with a salad of sliced cucumbers, red onion and cilantro with a quick asian vinaigrette.
Quick Asian Vinaigrette
In a jar shake all ingredients
Equal parts of each:
neutral oil
sugar (Splenda can be used in place of sugar)
rice wine vinegar
2 minced garlic cloves
1 tsp grated ginger
1 tsp sesame oil
I also add a good squirt of Sriracha and a little everything but the bagel seasoning
Left over filling makes a great rice bowl for lunch.
Quick Mu Shu
Serves 4
Time 30-40 minutes
1 lb meat or shrimp (meat should be sliced and shrimp should be peeled and deveined)
1 TB oil
3-4 green onions sliced
3 cups thinly sliced green cabbage
3cups sliced mushrooms
2 carrots cut into matchsticks
1/2 cup sliced red or yellow bell peppers
1/4-1/2 cup hoisin sauce
8 standard size flour tortillas
Sauce
4TB soy sauce
2 tsp sesame oil
2 minced garlic cloves
1 TB brown sugar
1/4 tsp black pepper
Whisk all sauce ingredients together and set aside.
In a non stick skillet add oil and meat and cook until almost cooked through, remove to a bowl and add mushrooms to the pan. Once mushrooms have browned a bit add green onions and continue cooking another 3-4 minutes.
Add in the cabbage, carrots, and bell pepper and cook an additional 3-4 minutes until carrots are just tender.
Add the meat to the pan with everything else and any juices that accumulated, also add the sauce mixture cook for about 2 minutes until combined and slightly thickened.
Smear a little hoisin on each tortilla, add filling roll and enjoy!
