Moist and full of all those winter spices, easy to make and always a favorite.
It's so delightful plain, but even more amazing toasted with a little cream cheese and a sprinkle of pumpkin seeds.
I had some leftover and was doing a friendsgiving and decided to add some to my stuffing. It was so good, those spices came through and a little sweetness with all the savory was really a nice treat.
Might be my new go to, I did 1/3 pumpkin bread and 2/3 regular bread croutons.
Starbucks Copy Cat Pumpkin Bread
1 1/2 cups flour
1 cup sugar
1/4 cup packed brown sugar
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp ground clove
1 tsp ground cinnamon
1/2 tsp salt
1 tsp ground nutmeg
1 tsp vanilla
4 large eggs
1 15 oz can pumpkin puree
3/4 canola oil
Pre Heat oven to 350
Spray a loaf pan with butter flavored no stick spray.
In a medium bowl combine the flour, baking soda and powder, nutmeg, cloves, cinnamon and salt.
In a seperate medium sized bowl combine the eggs, sugars, vanilla, pumpkin and oil whisk to combine.
Add in the dry ingredients and mix until just combined, don't over mix.
Pour into prepared loaf pan and bake 45 minutes or until a toothpick inserted comes out almost clean.
