Sundried Tomato Basil Torte

Tis the season for friends and family visits. It's always nice to have a few snacks around

that can be put together easy and be ready at a moments notice.

This appetizer is just that EASY. It comes together in a jiff, uses all the help from the store and is a classic flavor combo. It looks pretty and serves a crowd

I like to serve it with a good seeded cracker or baguette slices that have been drizzled with olive oil, salt and pepper and baked until crisp at 400 degrees.


It does need some time to set up in the fridge, but you can make it up to 4 days ahead.

You'll need a large soup bowl or a small mixing bowl. The ideal size is about 6 1/2" diameter and about 4" deep.

You'll need to line it with saran wrap, one long piece going length ways and another going sideways. This will allow the torte to mold and give you an easy way to get it out of the bowl and unmold i


Sundried Tomato Basil Torte

Serves 8-10


1 pkg 8 oz cream cheese

1 container Alouette either basil parmesan or garlic and herb


Blend these two together until creamy. This will be your first layer in the bowl.


1 10 oz container of your favorite prepared pesto ( I like the flavor of those purchased in the refrigerated section better)

1/2 cup bread crumbs ( you can use plain or Italian seasoned)


Mix together well this is your second layer


1 8 oz jar of sundried tomatoes in oil

1/2 cup breadcrumbs

1/2 cup grated parmesan cheese


Blend well in a food processor or blender to puree the tomatoes use all the oil in the tomato jar as well.


This is your top layer.


Wrap the saran over the top and let set for at least 4 hours, but best over night.


Prior to serving cover the bottom 2" with chopped pistachios or toasted pine nuts.
