Did you know one zucchini only has 25 calories? That makes these baked zucchini fries a good alternative to French fries.
They still get crispy in the oven and everyone loves them, even the kids!
I find the kids like them best when they get to dip them in a little marinara sauce.
You can tweek these with the seasonings to work with anything you're serving. My usual go to is Italian seasoning, but try cumin and chili powder or curry powder, or thyme and lemon zest.
Mix up your dipping sauces too, try a pesto, an aioli or a simple salsa.
These are yummy as a starter, as a side, or you could even make some
loaded zucchini fries for a main dish.
However you choose to serve them, you'll love them.

4 medium zucchini
3 eggs beaten
1 tsp fresh minced garlic
1 cup panko
3/4 cup grated parmesan cheese
1 1/2 Tb Italian seasoning
1 Tb onion salt
Pre heat oven to 400 degrees
Line a sheet pan with parchment paper and spray it with cooking spray.
Cut off both ends of the zucchini, cut each in half length wise, then each half into thirds. I know, that's a lot of math...lol but each zucchini should get you 6 long spears.
Put your eggs and garlic and a pinch of salt and pepper in a bowl large enough to add zucchini to and beat the eggs to incorporate. Add zucchini and give a good toss to coat well.
In a pie plate or bowl add the panko, parmesan and seasonings and mix well.
A spear at a time take them from the egg mixture and roll in the panko mixture to coat well.
Place on the baking sheet and continue until are done.
Spray the tops with cooking spray and bake for 15 minutes, turn and bake for 15 minutes more or until golden brown and crisp.
